1 pound boneless, skinless chicken thighs

1 medium onion, chopped

2 carrots, sliced

2 celery stalks, sliced

4 cups chicken broth

1 cup orzo pasta (or rice)

Juice of 2 large lemons

3 large eggs

Salt and pepper to taste

Fresh dill, for garnish

Instructions
 

In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, sliced carrots, and sliced celery. Sauté for about 5-7 minutes, or until the vegetables are softened and fragrant.

    Add the chicken thighs to the pot and season with salt and pepper. Pour in the chicken broth, and bring to a simmer. Cook for about 20-25 minutes, or until the chicken is fully cooked and tender.

      Remove the chicken from the pot and set it on a cutting board. Allow it to cool slightly, then shred the chicken into bite-sized pieces. Return it to the pot.

        Stir in the orzo pasta. Cook according to package instructions (usually about 8-10 minutes) until the pasta is al dente.

          In a medium bowl, whisk together the eggs and the lemon juice until well blended. To temper the eggs, slowly ladle a cup of hot broth into the egg mixture, whisking continuously to avoid curdling.

            Once well combined, slowly add the egg mixture back into the pot, stirring gently to incorporate it into the soup. Cook for an additional 2-3 minutes without bringing it to a boil (this helps to thicken the soup).

              Adjust seasonings with more salt, pepper, or lemon juice if desired.

                Ladle the soup into bowls and garnish with fresh dill before serving.
