2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons vegetable oil

2 large onions, diced

3 cloves garlic, minced

2 tablespoons sweet paprika

1 teaspoon cumin

1 teaspoon caraway seeds

1 bell pepper (red or green), diced

4 cups beef broth

2 medium potatoes, peeled and cubed

2 medium carrots, sliced

1 bay leaf

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large heavy pot or Dutch oven, heat the vegetable oil over medium-high heat.

    Add the beef cubes in batches, browning them on all sides. Remove the browned beef and set aside.

      In the same pot, add the diced onions and sauté until softened and translucent, about 5-7 minutes.

        Stir in the minced garlic and cook for an additional minute until fragrant.

          Sprinkle the sweet paprika, cumin, and caraway seeds into the pot, stirring quickly to prevent burning (about 30 seconds).

            Add the diced bell pepper and return the browned beef to the pot.

              Pour in the beef broth and add the bay leaf. Bring the mixture to a boil.

                Once boiling, reduce the heat to low, cover, and let simmer for 1.5 hours.

                  After 1.5 hours, add the cubed potatoes and sliced carrots to the pot, stirring to combine.

                    Simmer uncovered for an additional 30 minutes, or until the vegetables are tender and the sauce has thickened.

                      Season with salt and pepper to taste before removing from heat.

                        Discard the bay leaf and serve hot, garnished with freshly chopped parsley.
