3 large Yukon Gold potatoes, thinly sliced

1 cup heavy cream

1 cup milk

2 cups shredded Gruyère cheese

1 cup shredded sharp cheddar cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

½ cup plain breadcrumbs

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter.

    In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté for 1-2 minutes until fragrant.

      Pour in the heavy cream and milk, stirring to combine, and bring to a gentle simmer.

        Add the Gruyère cheese, cheddar cheese, fresh thyme, and season with salt and pepper. Stir until the cheeses have melted and the mixture is smooth.

          Layer half of the sliced potatoes evenly in the prepared baking dish. Pour half of the cheese sauce over the potatoes.

            Repeat with the remaining potatoes and cheese sauce, finishing with the sauce on top.

              Sprinkle the breadcrumbs evenly over the top layer for a crispy finish.

                Cover the dish with aluminum foil and bake for 45 minutes.

                  After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the potatoes are tender when poked with a fork.

                    Once done, let the gratin sit for about 10 minutes to set before serving.
