2 cups cooked chicken breast, shredded

4 cups mixed greens (such as romaine, spinach, and arugula)

1 cup red cabbage, thinly sliced

1 cup carrots, julienned

1 red bell pepper, thinly sliced

1/2 cup snap peas, trimmed and halved

1/4 cup green onions, chopped

1/4 cup toasted sesame seeds

1/2 cup peanuts, roughly chopped

1/3 cup rice vinegar

1/4 cup soy sauce (or coconut aminos for a gluten-free option)

1 tablespoon sesame oil

1 tablespoon honey or agave syrup

1 teaspoon ginger, grated

1 clove garlic, minced

In a large mixing bowl, combine the shredded chicken, mixed greens, red cabbage, carrots, red bell pepper, snap peas, and green onions.

    In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey or agave syrup, grated ginger, minced garlic, and a pinch of salt and pepper until smooth.
