6 medium-sized Granny Smith apples, peeled, cored, and sliced

1/2 cup brown sugar

1/4 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon cornstarch

2 tablespoons unsalted butter, diced

1 tablespoon vanilla extract

1 package (14 oz) of pre-made pie crusts (or homemade if preferred)

A pinch of salt

1 egg, beaten (for egg wash)

Optional: 1/4 cup oats and 1/4 cup chopped pecans for topping

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the sliced apples with brown sugar, granulated sugar, lemon juice, cinnamon, nutmeg, cornstarch, and a pinch of salt. Toss to coat the apples evenly. Let the mixture sit for about 15 minutes to allow the juices to mingle.

      Roll out one pie crust and fit it into a 9-inch pie pan. Trim excess edges hanging over the rim.

        Pour the apple mixture into the pie crust, distributing it evenly. Dot the top with small pieces of diced butter. If using, sprinkle the oats and chopped pecans for an extra crunch.

          Roll out the second pie crust to cover the filling. You can either cut slits to create a lattice top or lay it whole for a classic pie. If using a whole crust, remember to cut a few slits for steam to escape.

            Trim and crimp the dough edges, then brush the top crust with the beaten egg to give it a golden finish.

              Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the apples are tender. You may need to cover the edges with foil if they begin browning too quickly.

                Allow the pie to cool for at least 1 hour before slicing. This resting time helps the filling set.
