4 medium cucumbers, sliced thin

1 small red onion, thinly sliced

1 cup apple cider vinegar

1 cup sugar

1 tablespoon mustard seeds

1 tablespoon dill seeds

1 teaspoon black peppercorns

1 teaspoon salt

1/2 teaspoon turmeric (for color and flavor)

1/2 teaspoon garlic powder

Instructions
 

Begin by washing the cucumbers thoroughly under cold running water. Slice them thinly using a sharp knife or mandoline for uniformity. Place the sliced cucumbers in a large mixing bowl.

    Add the thinly sliced red onion to the bowl with the cucumbers. Gently toss them together to combine.

      In a medium saucepan, combine the apple cider vinegar, sugar, mustard seeds, dill seeds, black peppercorns, salt, turmeric, and garlic powder. Heat the mixture over medium heat, stirring until the sugar completely dissolves.

        Once the mixture reaches a gentle simmer, reduce the heat and let it simmer for about 2-3 minutes to infuse the flavors.

          Remove the saucepan from the heat and allow the pickling liquid to cool for about 10 minutes.

            Carefully pour the cooled pickling liquid over the cucumber and onion mixture in the bowl. Make sure all the slices are well covered.

              Transfer the picked cucumbers and onions into clean, sterilized mason jars, packing them tightly but leaving some headspace.

                Seal the jars with lids and place them in the refrigerator. Let them sit for at least 24 hours before consuming to allow the flavors to meld, though they are best after 3-5 days.
