2 ripe bananas, mashed

2 cups almond flour

1/4 cup honey or maple syrup

1/4 cup unsweetened applesauce

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or dark chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with cooking spray.

    In a large mixing bowl, combine the mashed bananas, honey or maple syrup, applesauce, eggs, and vanilla extract. Whisk together until smooth.

      In a separate bowl, whisk together the almond flour, baking soda, baking powder, cinnamon, and salt.

        Gradually add the dry ingredients to the wet ingredients, stirring gently until fully combined. If using, fold in the chopped walnuts or dark chocolate chips.

          Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.

            Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
