Ingredients
  

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 jalapeño, deseeded and finely chopped

1/2 cup red onion, finely chopped

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or pepper jack)

10 small to medium-sized flour tortillas

1 tablespoon olive oil

Avocado or cilantro lime dip, for serving

Instructions
 

In a large mixing bowl, combine black beans, corn, red bell pepper, jalapeño, red onion, cumin, chili powder, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.

    Once the veggies and beans are mixed, gently fold in the shredded cheese until evenly distributed.

      Lay out a tortilla on a flat surface. Place about two tablespoons of the filling mixture in the center of the tortilla.

        Fold the sides of the tortilla over the filling and then roll it up from the bottom, ensuring it's tightly wrapped.

          Repeat the process until all tortillas and filling are used up.

            Preheat your air fryer to 375°F (190°C) for about 5 minutes.

              Brush the egg rolls lightly with olive oil or spray them with cooking spray to help them crisp up.

                Place the egg rolls in the air fryer basket in a single layer, making sure to leave space for air circulation. You may need to do this in batches.

                  Air fry for 8-10 minutes or until golden brown and crispy, turning the egg rolls halfway through for even cooking.

                    Remove the egg rolls from the air fryer and let them cool for a moment before serving.
