2 cups cooked chicken, shredded

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup cooked quinoa

1 cup shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas

Olive oil spray

Fresh cilantro, chopped (for garnish)

1 avocado, sliced (for serving)

Salsa or hot sauce (for serving)

Instructions
 

In a large bowl, combine the shredded chicken, black beans, corn, cooked quinoa, shredded cheddar cheese, chili powder, cumin, garlic powder, onion powder, and a pinch of salt and pepper. Mix well until all ingredients are evenly combined.

    Place a tortilla on a clean surface. Spoon about 1/4 of the chicken mixture into the center of the tortilla, leaving some space at the edges.

      Fold the sides of the tortilla inward and roll it up tightly from the bottom to secure the filling. Repeat this process for the remaining tortillas and filling.

        Lightly spray the air fryer basket with olive oil to prevent sticking. Place the burritos seam side down in the basket, ensuring they are not overcrowded. You may need to cook in batches depending on the size of your air fryer.

          Set the air fryer to 350°F (175°C) and cook for 10-12 minutes or until the burritos are golden brown and crispy. Flip them halfway through the cooking time for even crispiness.

            Once cooked, carefully remove the burritos from the air fryer and let them cool for a couple of minutes.

              Serve the burritos topped with fresh cilantro, avocado slices, and a side of salsa or hot sauce.
