4 slices of sourdough bread

4 slices of sharp cheddar cheese

2 tablespoons unsalted butter, softened

2 tablespoons pesto (store-bought or homemade)

1/4 cup sun-dried tomatoes, chopped

Fresh basil leaves, for garnish

Salt and pepper to taste

Instructions
 

Preheat your air fryer to 360°F (182°C) for about 5 minutes.

    Take two slices of sourdough bread and spread one tablespoon of softened butter on one side of each slice.

      Place one slice of bread, butter side down, onto a cutting board. Top with a slice of cheddar cheese, followed by a layer of sun-dried tomatoes and a spoonful of pesto. Add another slice of cheddar cheese on top and close it with the second slice of bread, butter side up. Repeat for the second sandwich.

        Carefully place both sandwiches in the preheated air fryer basket, ensuring they are not overlapping.

          Cook for 8 minutes, flipping the sandwiches halfway through for even golden-brown results.

            Once they are crisp and the cheese has melted, remove the sandwiches and let them cool for a minute.

              Slice the sandwiches in half, sprinkle with salt and pepper, and garnish with fresh basil leaves.
