3 cups cooked jasmine rice (preferably chilled)

1 cup mixed vegetables (carrots, peas, corn)

2 large eggs, beaten

3 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

2 green onions, sliced

Optional: 1/4 cup cooked chicken or shrimp (for added protein)

Instructions
 

In a large mixing bowl, combine the chilled rice, mixed vegetables, and optional protein (if using).

    In a small bowl, whisk together the beaten eggs, soy sauce, sesame oil, garlic powder, onion powder, and black pepper until well mixed.

      Pour the egg mixture over the rice and vegetable mix, stirring gently to ensure everything is evenly coated.

        Preheat your air fryer to 360°F (180°C) for about 3 minutes.

          Once preheated, transfer the rice mixture into the air fryer basket, spreading it out in an even layer (if using a smaller air fryer, you may need to do this in batches).

            Air fry the rice for 10 minutes. After 5 minutes, pause the air fryer and shake the basket to ensure even cooking.

              After 10 minutes, open the basket and add the sliced green onions, giving it a quick stir before returning it to the air fryer for another 2-3 minutes.

                Once the rice is crispy and heated through, remove it from the air fryer. Adjust seasoning if needed.
