Ingredients

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 can (10 oz) tomato soup

1 can (12.5 oz) canned chicken, drained

1 can (4 oz) sliced jalapeños (optional for heat)

1 packet taco seasoning

4 cups chicken broth

1 tablespoon olive oil

Fresh cilantro, for garnish (optional)

Sour cream and shredded cheese, for serving (optional)

Instructions

In a large pot, heat the olive oil over medium heat.

Add the canned chicken to the pot and sauté for about 2-3 minutes to warm it through.

Stir in the taco seasoning and mix well, ensuring the chicken is coated.

Add the black beans, kidney beans, corn, diced tomatoes with green chilies, tomato soup, jalapeños (if using), and chicken broth to the pot.

Stir the mixture until combined, bringing it to a simmer.

Lower the heat, cover the pot, and let it simmer for about 15-20 minutes to allow all the flavors to meld.

Taste and adjust the seasoning with salt and pepper if needed.

Serve hot, garnished with fresh cilantro, and offer sour cream and shredded cheese on the side.
