Blueberry Breakfast Quesadilla Quick and Tasty Meal

I love starting my day with a blueberry breakfast quesadilla. It combines sweet and savory flavors in a fun way. This dish is quick to make and super tasty. You can whip it up in just 20 minutes!

To begin, gather your ingredients. You will need whole wheat tortillas, fresh blueberries, ricotta cheese, honey, and mozzarella cheese. I also add vanilla extract and cinnamon for more flavor. These simple ingredients create a delightful meal.

Mix the ricotta cheese, honey, vanilla, and cinnamon in a bowl. This creamy mix is the star of the quesadilla. Spread it on half of a tortilla, then pile on fresh blueberries. The burst of blueberry flavor is amazing!

Now, fold the tortilla in half to hold in the filling. Heat a non-stick skillet over medium heat. Add butter to the skillet and let it melt. Once it’s hot, place the quesadilla in the pan. Cook until golden brown, then flip it over. This helps both sides get crispy.

After cooking, cut the quesadilla into wedges. You can serve it warm, and if you like, add fresh mint leaves for a pop of color. This dish is not only quick but also a feast for the eyes.

Ingredients

4 whole wheat tortillas

1 cup fresh blueberries

1 cup ricotta cheese

1 tablespoon honey

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/2 cup shredded mozzarella cheese

2 tablespoons butter (for frying)

Fresh mint leaves (for garnish, optional)

Instructions

In a medium bowl, combine the ricotta cheese, honey, vanilla extract, and cinnamon. Mix until smooth and well combined.

Lay a tortilla on a clean surface. Spread a generous layer of the ricotta mixture evenly across half of the tortilla.

Scatter a portion of fresh blueberries on top of the ricotta mixture, followed by a sprinkle of shredded mozzarella cheese.

Fold the tortilla in half to create a semicircle enclosing the filling.

Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Once melted, place the quesadilla in the skillet.

Cook for about 3-4 minutes until the bottom is golden brown, then carefully flip the quesadilla using a spatula. Add the remaining tablespoon of butter, if needed, and cook for an additional 3-4 minutes on the other side.

Remove from the skillet and let it cool slightly before cutting into wedges.

Repeat the process with the remaining tortillas and filling ingredients.

Serve warm, garnished with fresh mint leaves if desired.

                    Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 2-4
