baby carrots, peeled and trimmed

pure maple syrup

Dijon mustard

tablespoons
olive oil

tablespoon
fresh thyme leaves
to taste
salt and pepper

sesame seeds (optional for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the maple syrup, Dijon mustard, olive oil, thyme leaves, salt, and pepper. Whisk until smooth.
Add the baby carrots to the bowl and toss well to coat them evenly with the maple-Dijon mixture.
Line a baking sheet with parchment paper for easier cleanup. Spread the coated carrots in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
Once done, remove from the oven and, if desired, sprinkle sesame seeds over the top for added crunch and flavor.
Serve warm as a delicious side dish to complement any meal.
Notes
Optional sesame seeds can be added for garnish.
