Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper, leaving some overhang to easily lift out the meatloaf later.
In a large mixing bowl, combine the ground meat, breadcrumbs, milk, ketchup, chopped onion, minced garlic, egg, Worcestershire sauce, salt, and pepper. Mix until everything is just combined; overmixing can make the meatloaf tough.
Transfer the meat mixture into the loaf pan and shape it into a loaf, pressing it down gently to ensure it's packed but not overly compressed.
In a small saucepan over medium heat, combine honey, soy sauce, apple cider vinegar, and ground ginger. Stir everything together and bring to a simmer. Allow it to cook for about 3–4 minutes until slightly thickened.
Brush half of the honey garlic glaze over the top of the meatloaf.
Bake the meatloaf in the preheated oven for 45–55 minutes, or until the internal temperature reaches 160°F (71°C).
About 10 minutes before it’s done, remove the meatloaf from the oven and baste it with the remaining honey garlic glaze.
Once cooked, let the meatloaf rest for about 10 minutes before lifting it out of the pan using the parchment paper. This will help retain moisture.
Slice the meatloaf and garnish with chopped green onions before serving.
